The year was 1971, the same year that the walls of our hotel — then known as The Mandarin Singapore — were first built. The dream was simple, but bold for its time: to bring Singaporean Flavours from the city’s streets and into the comforts of a five-star luxury hotel.

Serving Singaporean flavours Since 1971, we are the home of the Mandarin Chicken Rice with the recipe evolving into its own ritual over the years. Fiercely guarded and unyielding to the passage of time, it was the result of capturing street-side flavours and textures that have remained consistent over 50 years.
